Ninh Binh gains it fame for its ancient capital of Hoa Lu (Hoa Lư), Tam Coc - Bich Dong landscape, Phat Diem stone church, etc. However, once you have not tried goat meat here, you supposedly have not been thoroughly aware of Ninh Binh.Goats here are raised on limestone mountains with leaves as their foods. Hence, their meat is much better than hill-raised goat meat. Goat meat here is made to become a featured speciality, strongly charming in countryside taste, inherited with unique know-how that make it become well-known speciality.

 

Once enjoyed mountain-raised goat meat in Ninh Binh, you will find it hard to forget rare goat meat in Me town (Gia Vien district, Ninh Binh province). There are three kinds of rare goat meat with three ways of preparation. Soaked rare  is the preparation of which goat meat is thinly sliced and then dipped in boiling water. Having this kind of goat meat will give a better taste with tougher meat. Stir-fried goat meat is another way of preparation in which sliced goat meat is stir-fried on a span with vegetable oil at very high temperature. This kind of preparation alternatively gives meaty and delicious taste. Last but by no mean least is rare goat meat mixed with sesame in which sliced goat meat stir-fried on with vegetable oil at high temperature, then thoroughly mixed with roasted and pounded sesame or peanut in combination of some other spices. Once having this kind of goat meat, you will experience full delicious tastes of ingredients from tip of your tongue to oesophagus.

 

You may enjoy rare goat meat accompanied with some spices such as: capsicum, garlic, citronella, herbal vegetables, etc up to taste of each individual. Burned rice (Com Chay)

 

Introduction

 

Come to Ninh Binh City, enter the Hotel or the Restaurant, the excursionist can contemplate the Burned rice. Burned rice is made of unburned rice, which is flatted into a flat round. After drying, the flat round unburned rice is fried in boiling vegetable oil until crispy before being broken into small pieces and transferred to a bowl. The process of making this dish is great. First, people will a good kind of rice (may be a combination between different kinds). Then they put the rice into a cast-iron pot with thick sole. After being cooked in a certain period, the cooked rice will be taken out and the remains will be kept in the pot. The completed product is preserved in tight nylon bags. When visitors want to enjoy burned rice, they will be taken out of bags and fried on hot oil pan. The hot and delicious burned rice is served with hot soups.

Eel vermicelli noodle

 

Introduction

 

Another specialty visitors should try when they come to Ninh Binh is eel vermicelli noodle. The main ingredient of this dish is eel. ing eels to make good dish is quite challenged and requires experience. High quality eels are small eels called” lưon com” which are strong , fat and still fresh .They have brown-pink backs and yellow bellies. Besides main ingredient, banana flower and vermicelli  are other important elements. Banana flower should be fresh and ripe. Vermicelli must be made from high quality  phrynium fruits and are small, pure threads .

 

Eels are washed carefully with vinegar, removed the inside , mixed with spices like red chili, onion, pepper, fish sauce and then fried in hot oil until fragrant and yellow. Banana flower is cut into thin threads and soaked in salt water to remove resin and keep it white. Vermicelli is put into cool water for 5-7 minutes and then fried with mashed onion . Eel vermicelli noodle is often eaten with ginger, “ la lot” and lemon juice. The crispness and pleasant smell of yellow fried eels, the acrid , buttery and sweet taste of banana flower accompanied with the spiciness of ginger , chili , the pungency of “ la lot”  and the sourness of lemon juice converge on the eel vermicelli bowl that make a try worth a thousand words.
